15-Minute Egg Fried Rice
By Quick Supper Ideas · Published October 11, 2026

Leftover rice is one of my favorite things to find in the fridge, because it means egg fried rice is about fifteen minutes away. I usually cook extra rice on Sunday just to have it, and this dish has quietly become our most-made weeknight dinner. It’s cheap, it uses up odds and ends, and it tastes better than most takeaway versions because you can control the salt and keep the vegetables bright.

On a busy night, the beauty is that there’s almost no prep. Beat two eggs, slice some spring onions, grate a bit of ginger, and grab a bag of frozen peas and carrots. The rest is just a hot pan and a few minutes of confident tossing.

What you need to know about the ingredients

Cold cooked rice. This is the most important part. Rice that has been chilled overnight is drier and firmer, so the grains separate and fry instead of turning gluey. Jasmine and long-grain white rice are ideal. Brown rice works too and gives a nuttier result. If you only have freshly cooked rice, spread it on a tray and let it steam off for ten minutes, or chill it in the freezer for fifteen.

Eggs. Two eggs give soft, golden ribbons throughout. Add a third if you’d like it more filling.

Frozen peas and carrots. Thaw them first so they don’t cool down the pan. Corn, edamame, diced pepper, or chopped green beans all work.

Soy sauce. Low-sodium soy sauce gives you room to adjust. Use tamari for a gluten-free version, or coconut aminos for a soy-free, slightly sweeter option.

Sesame oil. Toasted sesame oil adds a deep, nutty fragrance. A little goes a long way.

Ginger and spring onions. Freshly grated ginger brings warmth; the spring onions add sharp, fresh crunch at the end.

Step by step

Scramble the eggs. Heat the neutral oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and let them set for a few seconds, then gently push them around until they form large, soft curds, about a minute. Take them out while they still look slightly glossy; they’ll finish cooking later.

Fry the aromatics and vegetables. Add the sesame oil and ginger to the pan. After about fifteen seconds, when it smells sharp and fragrant, tip in the peas and carrots. Stir-fry for two minutes until hot and glistening.

Fry the rice. Add the cold rice and press any clumps apart with the back of a spatula. Spread it out and leave it for thirty seconds or so between stirs, so some grains get toasty and slightly crisp. Keep going for four to five minutes until the rice is hot through and you hear a gentle crackle.

Season and finish. Drizzle the soy sauce around the edges of the pan rather than straight onto the rice; it sizzles and caramelizes slightly that way. Return the eggs, add the spring onions, and toss for a minute until evenly colored. Taste and add a little more soy if needed.

Mistakes people often make

Using warm, fresh rice is the classic error and leads to a sticky, mushy pan. Overloading the skillet is another; if you’re doubling the recipe, fry in two batches. Too much soy sauce makes the rice wet and overly salty, so start with less and add more at the end. And don’t stir constantly — letting the rice sit for a moment is what gives it those lovely toasted bits.

Variations

  • Gluten-free: Swap soy sauce for tamari and check your sesame oil is pure.
  • Vegan: Leave out the eggs and fry crumbled firm tofu with a pinch of turmeric instead.
  • Add protein: Toss in diced cooked chicken, small shrimp, char siu pork, or leftover ham with the vegetables.
  • Kimchi fried rice: Stir in a half cup of chopped kimchi and a spoonful of gochujang with the rice.
  • Pineapple version: Add small chunks of pineapple and a few cashews for a sweet, crunchy twist.

What to serve with it

Egg fried rice is a meal on its own, but it’s also an easy base. Try it alongside quick cucumber salad dressed with rice vinegar, steamed bok choy with garlic, or a simple stir-fry of broccoli. A fried egg on top with a drizzle of chili crisp turns it into something special.

Storage and reheating

Cool leftovers quickly, ideally within an hour, and refrigerate in a shallow airtight container for up to two days. Rice can harbor bacteria if left out too long, so this matters. Reheat in a hot skillet with a teaspoon of oil, stirring until steaming all the way through, or microwave covered with a splash of water. Fried rice isn’t ideal for freezing once the egg is added, as the texture becomes spongy.

Helpful tips

  • Use rice refrigerated promptly after cooking and reheat until steaming hot.

Frequently asked questions

Why does my fried rice get mushy?

Usually because the rice was too fresh and moist, or the pan was overcrowded. Use chilled rice and a large, hot pan.

Can I use brown rice?

Yes. Chilled brown rice fries well and has a nuttier flavor and chewier texture.

Do I need a wok?

No. A large nonstick or cast-iron skillet works perfectly; just keep the heat high and avoid overfilling it.

How do I make it taste more like takeaway?

Use a very hot pan, a little extra sesame oil, and a pinch of white pepper. Adding a splash of oyster sauce also helps if you're not keeping it vegetarian.

Is it safe to reheat rice?

Yes, as long as it was cooled quickly, refrigerated promptly, and reheated until steaming hot throughout. Only reheat it once.
